hello, am an engineer and is very much interested in chocolate industry. i am from kerala and used to give training in chocolate production. generally many persons talk of large scale production only. my research has shown that low quantities of 1kg or lesser can be produced with good quality. technical details and more understanding of the cocoa and chocolate is important. many people are into this business and am invited regularly for consultation and quality checking and also process flow corrections. its simple and u can produce chocolate with only a grinder as machinery and some cooking utensils. if u start from chocolate mass u can avoid the chores of producing from beans. u can also start from chocolate itself.which can directly used to produce chocolate sweet. its more easier and u can get more time to market.this method is suitable for small towns and low cost.reward is handsome.i used to give training to small groups for free.but now the cost has become a burden to me and now i receive donations too.they pay me well hahaha. their profit is very good and they are thankful to me.what more a person need.if anyone need help call me or email to shanbs1@gmail.com. large scale chocolate factory is good but to find the market is difficult.my advice is to start a small firm deal with 50 to 100 kg or lesser.develop ur unique tastes and flavours. acquire international fame .

starting chocolate or any confectionery business or food industry, the first thing one should acquire is knowledge. india's greatest food science college is in mysore. please visit there study their courses or at least talk with the professors there. also please do an entrepreneur course in msme, small industries dept ,course fees are very lesser and the certificate will be a great advantage in procuring loans.

chocolate manufacturing can be done from beans, the steps involved are
1.roasting in medium heat for 10 to 20 minutes.
2.remove the husk or hard cover
3.grind the nibs left
4.resulting is pure chocolate
5.add sugar 15 -80 % according to need
6.add milk powder as needed
7.mix using a grinder
8.tempering and or counching can then be done
9.mould to required shapes.
grinder is the only essential machinery. if u want to separate powder and butter then u have to use a hydraulic press. that machine can be purchased or designed using a jack with a local workshop expert, pack it by hand or machine. pure organic chocolates are priced 10 times the industrial chocolates.
