    Hi there, I live in Perth, WA, Australia but liked this article and wanted to know more about fresh pasta manufacturing. The country I want establish the business is my native country's capital, Mogadishu and I have to start from scratch. Please try to help me get following:
    1. Training
    2. all necessary equipment for start-up
    3. I would prefer to get the equipment from Australia
    4. Estimated cost for the equipment I will add other cost like transportation and local costs

    #Jayanta. Dear Sir, I would like to give you some feedback regarding your questions.
    1. Training. You should plan to spend at least 1 week in Italy to get enough knowledge and training on fresh pasta technology. I might assist you on both theoretical/practical aspects, as well as in contacts with local machinery suppliers.
    2. Equipment for start-up. This is depending on the size and type of the business you are targeting (e.g. industrial or artisanal? direct sale for immediate consumption, or packaging for distribution to retailers etc.?) - - You should clarify.
    3. Origin of the equipment. This might be a secondary point; quality of raw materials, recipes, hygiene along the process are for example among the points of much higher priority. Bear in mind however that in Italy you can find probably the best machinery and the largest choice, with regards to fresh pasta manufacturing.
    4.Estimated cost. Again, this is hardly predictable if you do not specify your objectives, first of all. Anyway, just to give you a very rough idea, setting up a small lab, with limited technology and production for immediate sale and consumption of products (like the typical "fresh pasta shops" we have in Italy) might call for an investment in the range of 25,000 USD (for machinery and equipment only).
