    I am jean for short and no work. I used to make native sausages in our country and it was salable. do it was simple & no preservative & extender added it is tasty and healthy. and also helped me in raising my seven kid. but now I am not as brave as I am before may be because of my age and alone. I will also try and test my recipe bec. it was a long time ago that I stop. and I am now here in Hawaii. I do not know where to buy the equipment and how to use it . before I use manual to put the meat to the casing maybe better if I use also machine to put the meat to the casing.     I am from South Africa and have little problem in sourcing good quality meat and equipment. There is a fair amount of information about making sausages - from recipes to technical and equipment on the internet. It seems to me to find a market is the most problematic. As one normally have to purchase from suppliers that often make their own, it is difficult to compete as their prices are better than yours. The solution that appears most attractive is to start manufacturing and add value by either cooking the product or incorporate as part of a dish. Any comments?
